Drew Carballo currently serves as Director of Strategic Operations, joining the executive team in January 2026. Specializing in optimizing business performance, increasing the bottom line and building highly motivated, cross-functional teams across numerous ventures.
As a leader and builder of strategic operations, he uses active management, operational proficiency and broad financial acumen; balancing brand vision with daily operational challenges.
Accountable for leading multi-unit operations leadership in driving sales and EBITDA goals in alignment with the specific strategic plan. Drew partners with operations leadership to define budget and sales goals; aligned with the leadership on execution of such plans. Coaching management on Profit and Loss statements; render guidance and corrective action on cost of goods and other controllable measures on a weekly basis. Creating customizable frameworks and tools that are specifically suited to the operation’s needs.
Before joining Pond Lehocky Giordano, Drew was actively engaged in the consulting sector, where he provided invaluable assistance to brands, helping them streamline their operations as they navigated the complexities of private equity. His ability to enhance operational efficiency has garnered him recognition as a leader in the restaurant industry. Drew’s most notable position was with LDV Hospitality, where he served as an Operations Executive. In this capacity, he was responsible for overseeing operations across numerous brands, managing overall functionalities in all LDV’s locations. His extensive knowledge and experience in this oversight not only ensured regulatory adherence but also significantly improved the operational execution of the brands.
